Tender Coconut Pudding

Ingredients
- Tender Coconut Pulp - 2 cups
- Tender Coconut Water - 2 cups
- China grass - 10 gms
- Milkmaid - 1 tin
- Milk - 1 ½ cup
- Water - ½ glass
- Sugar - 4 tbsp
- Coconut (grated) - ½ cup
- Sliced Cherries - ¼ cup
Method of Preparation
Coarsely grind the tender coconut pulp along with the coconut water and set aside. In a separate pan, combine the milk and milkmaid with 2 tablespoons of sugar, bring it to a boil, and then keep it aside. Soak the china grass in half a glass of water for 15 minutes. Once soaked, dissolve the china grass completely by double boiling it in a bowl. While both the milk mixture and the dissolved china grass are still hot, blend them together thoroughly. Allow this mixture to cool down. Next, add the tender coconut pulp mixture to the cooled milk mixture and mix well. Set it aside for 20 minutes.
In a heated pan, sauté the grated coconut with 2 tablespoons of sugar over low heat until it turns golden brown. Use this to garnish the pudding along with cherries.
